2 cups pitted dates
2 cups cashews
¼ cup cacao powder
¼ cup cacao nibs
½ cup goji berries
1 tbsp. chia seeds
½ cup sunflower seeds
½ cup pumpkin seeds
½ cup coconut oil

Place cashews into a food processer and process until they are smooth. Add in the dates and cacao powder until it the mixture clumps up into a large mass. Add in cacao nibs, sunflower seeds, pumpkin seeds, goji berries and chia seeds and pulse so they mix in evenly. Add in coconut oil to make mixture sticky. Line a baking dish with tin foil and empty the mixture into the lined dish. Press the mixture with your fingers to make sure it’s smooth and even. Refrigerate for at least 30 minutes. Cut into bar shaped pieces and serve. Serves 4.
